Roasted pumpkin and feta salad 🎃

Not quite ready to dive into hearty comfort food? This easy Roasted Pumpkin and Feta Salad delivers the warm, earthy flavours of autumn while still being light and fresh.

The sweet, caramelised pumpkin pairs perfectly with the salty feta, and the kale base makes this salad more filling than your usual summer one. Let’s get started! –

What you’ll need –

1 small pumpkin or squash

1 bag of kale

30g of feta

A handful of walnuts or pecans

Salt, pepper and olive oil to taste

How to make it –

  1. Start by preheating the oven to 200C. Cut the pumpkin in half from stem to base, and slice each half into four lengthways segments. Remove the seeds and cut into smaller segments or cubes.
  2. Place the pumpkin into a roasting tray with a drizzle of olive oil, salt and pepper. Roast for 20-30 minutes or until soft and caramelised around the edges.
  3. While the pumpkin is roasting, wash and dry the kale and place it in a bowl with the cubed feta.
  4. Add the walnuts or pecans to the pumpkin roasting tray, roasting these for approximately 8 minutes.
  5. Remove the pumpkin and nuts from the oven. Add the pumpkin to the kale and feta, and gently toss to combine. Finish by sprinkling over the toasted nuts.
