Date & Dark Chocolate Bars: Gut-friendly, high-fibre treats
A naturally sweet, high-fibre snack that’s as good for your gut as it is for your taste buds! Made with soft dates, dark chocolate and peanut butter. The dates give a chewy texture, with creamy peanut butter and chocolate to bind them together. Customise with your favourite toppings – think nuts, seeds, dried fruit, or even juicy pomegranate seeds – for an extra burst of flavour and nutrition.

Ingredients:
- 200g dates (preferably Medjool)
- 100g dark Chocolate (70%+)
- 1 – 2 TBSP high quality peanut butter
- Handful of optional toppings: seeds, nuts, dried fruit etc.
Method:
- Lay baking paper flat on a baking tray. You can use a little bit of oil or butter underneath to keep it in place.
- Melt the dark chocolate (microwave in short bursts or place the bowl of chocolate on top of a pan with boiling water and stir).
- De-pit the dates, open them flat, and press them down into a rectangle on the baking paper.
- Spread the peanut butter evenly across the flattened dates.
- Once the chocolate is melted, pour over the top of the dates and peanut butter.
- Sprinkle nuts, seeds, or fruit while the chocolate is still soft.
- Chill in the fridge for 2 hours or until firm, and enjoy!
