Healthy Jam Tarts
Jam tarts are a timeless treat that many of us remember from childhood – simple, sweet and comforting! Traditionally made with buttery pastry and sugary jam, they’re delicious but not always the healthiest option. The good news? With a few smart ingredient swaps, you can create a healthier version that keeps the same nostalgic flavour, while giving your children (and yourself!) a nutritional boost.
This recipe uses wholegrain flour, frozen fruit, and a natural sweetener to create a snack that feels indulgent but offers more fibre, vitamins, and minerals. Perfect for a guilt-free treat, a lunchbox-friendly bake, or a lighter twist on a classic recipe, these healthy jam tarts are simple, satisfying, and family-approved.

Ingredients (makes 12 jam tarts, plus extra jam!)
For the jam:
- 300g frozen fruit (mixed berries, raspberries, black forest fruit)
- 2 TBSP lemon juice
- 2 TBSP agave syrup (or honey)
- 4 TBSP chia seeds (high in fibre and great for gut health!1https://www.healthline.com/nutrition/chia-seeds)
For the pastry:
- 5 TBSP cold water
- 100g unsalted butter (can use a dairy free alternative)
- 225g wholemeal spelt flour (rich in fibre and gut-friendly)
- 1 TBSP ground flaxseed (optional, adds extra omega-3s and fibre)
Method
1. Make the jam
- In a saucepan over medium heat, combine the frozen fruit and lemon juice.
- Break up the fruit with a wooden spoon until it softens into a sauce.
- Remove from heat and stir in chia seeds and agave syrup (or honey).
- Allow to cool, then refrigerate overnight to set.
2. Prepare the pastry
- Rub butter into the spelt flour using your fingertips until the mixture resembles breadcrumbs.
- Gradually add cold water and mix until it forms a smooth dough. Add a little extra water if needed.
- Shape into a ball, wrap in cling film, and chill in the fridge for at least 30 minutes.
3. Assemble
- Preheat the oven to 180°C (fan).
- Roll out the chilled pastry to about 0.5 cm thick on a lightly floured surface.
- Cut into 12 rounds and press into a muffin or tart tin.
- Spoon the jam evenly into each pastry cup. Save any leftover jam for yoghurt or toast.
- Bake for 20 minutes, then allow to cool for 10-15 minutes before removing from the tin.
Storing & serving your jam tarts
These healthy jam tarts can be stored in an airtight container at room temperature for 2-4 days. For a slightly longer shelf life, keep them refrigerated.
Serve them as a guilt-free snack, a lunchbox treat, or warm with a dollop of natural yoghurt for a delicious pudding. Any leftover jam can be enjoyed on toast or stirred into porridge, making this recipe both versatile and family-friendly.
