Fritters are delicious and easy to whip up when you’re short on time! These courgette fritters are a hit with both adults and children, making them perfect for the whole family to enjoy.
They are great to prep ahead of time for midweek lunches or as part of an evening meal. They can be served with salads, rice dishes, dips, and even poached or fried eggs!
For me, the perfect combination is courgette fritters, a Greek salad, and homemade tzatziki. They are fresh, light, and tasty! What’s not to like?

Ingredients
- 1 courgette
- 2 eggs
- 3 TBSP of plain flour
- 1/4 TSP of baking powder
- Pinch of sea salt
- Olive oil for frying
Method
- Whisk 2 eggs in a medium sized bowl.
- Grate the courgette and combine with the eggs.
- Add the plain flour, baking powder and pinch of salt to the mixture and stir well until fully combined.
- Place a frying pan on a medium heat and add approximately 1 TBSP of olive oil to the pan to heat up.
- Add a large spoonful of the fritter mixture to the frying pan and cook for a few minutes on each side. You want your fritters to be golden brown.
- Repeat with the rest of the mixture. Stopping once all the fritters are cooked.
- Serve your fritters with a delicious side salad and dip of choice.
