Strawberry and dark chocolate granola – a delicious way to start your day!

Let’s face it, breakfast can be a tricky meal to get right – you might have a busy commute, important work meetings, or demanding school runs! Whatever the hurdle, I’m here to tell you that eating well doesn’t need to take a backseat to your hectic schedule. This delicious granola recipe can be made ahead of time, helping to keep your mornings running smoothly. It’s perfect for the whole family to enjoy and is easy to pack up and eat on the go.

This granola contains a variety of plant foods, including nuts, seeds, berries, and whole grains. These foods are rich in fibre and contain important prebiotics, which support a healthy and balanced gut microbiome. Remember – prebiotics feed probiotics to support their growth!

Homemade granola can be served with yoghurt, kefir, milk, and various fresh fruits. My favourite combination is kefir, mixed berries, granola, and a generous helping of nut butter – crunchy, satisfying, and nutrient-rich!

Ingredients

  • 200g oats
  • 40g roughly chopped walnuts
  • 25g roughly chopped pecans
  • 30g pumpkin seeds
  • 35g unsalted butter
  • 1/4 TSP of vanilla extract
  • 30g pure maple syrup
  • 1 handful of dark chocolate chips
  • 1 handful of freeze-dried strawberries

Method

  1. Line a large baking tray with parchment paper.
  2. Add the oats, nuts, and seeds to the tray and mix well.
  3. In a small pan, add butter and melt over a low heat.
  4. Once your butter is melted, take the pan off the heat and add the maple syrup and vanilla extract and mix until combined.
  5. Pour the butter mixture over the oats and stir well, until all of the oats, nuts and seeds are covered.
  6. Pop the tray in the oven and bake for 15 minutes at 190 degrees celsius. Check on the granola throughout the cooking process, and as it starts to turn golden brown stir well to ensure all of the mixture is cooked evenly. Be careful the mixture doesn’t burn!
  7. Once the mixture is cooked, take it out of the oven to cool.
  8. Once cooled, stir in the dark chocolate chips and freeze-dried strawberries.
  9. This granola can be stored in an air-tight container for a few days.
