Ingredients
- Β½ medium banana (ripe for sweetness or green for resistant starch)
- 30 g oats
- 10 g soaked quinoa
- 3 g baking powder
- 1 egg
- 40 g Greek yoghurt
- 40 ml Chuckling Goat Kefir
- Handful of chocolate chips (we used white because 80/20 rule!)
- Handful of blueberries
- Extra virgin olive oil (for cooking)
Method
- Blend banana, oats, soaked quinoa, baking powder, egg, yoghurt, and kefir until smooth.
- Stir in the chocolate chips and blueberries.
- Heat a little olive oil in a pan.
- Pour ΒΌ of the batter into the pan, cook until golden, then flip! Repeat for each pancake.
- Stack βem up & add your favourite toppings!
