Gut-loving kefir pancakes!

Fluffy, chocolatey, gut-friendly pancakes with kefir benefits? Yes, please! These high-fibre, protein-packed pancakes are made with gut-loving kefir, soaked quinoa, and juicy blueberries for the ultimate gut-health boost!

These pancakes are packed with prebiotics, probiotics, postbiotics & fibre to nourish your gut microbiome! Give this recipe a try and let us know what you think! πŸ₯ž

Ingredients

  • Β½ medium banana (ripe for sweetness or green for resistant starch)
  • 30 g oats
  • 10 g soaked quinoa
  • 3 g baking powder
  • 1 egg
  • 40 g Greek yoghurt
  • 40 ml Chuckling Goat Kefir
  • Handful of chocolate chips (we used white because 80/20 rule!)
  • Handful of blueberries
  • Extra virgin olive oil (for cooking)

Method

  1. Blend banana, oats, soaked quinoa, baking powder, egg, yoghurt, and kefir until smooth.
  2. Stir in the chocolate chips and blueberries.
  3. Heat a little olive oil in a pan.
  4. Pour ΒΌ of the batter into the pan, cook until golden, then flip! Repeat for each pancake.
  5. Stack β€˜em up & add your favourite toppings!
