Chocolate + Orange Prebiotic Energy Balls – your go-to snack!

Need a gut-healthy alternative to those late afternoon vending-machine trips? When blood sugar dips after lunch, these tasty treats are a great option to keep you going – enjoy!

Ingredients

200g dates, pitted
100g nuts and seeds

2 tbsp peanut butter
1 heaped TBSP Chuckling Goat Complete Prebiotic
1 heaped TBSP cacao powder + extra for rolling

1 TBSP flaxseed oil

Zest of 1 large orange and juice of 1/2

Method

If your dates are a little dry, soak them in hot water for 5-10 minutes.

Add the peanut butter, Chucking Goat Complete Prebiotic, cacao powder, flaxseed oil, orange juice and zest to a mixing bowl.

Lightly pulse the nuts/seeds in a blender – don’t blend too much, the bigger the chunks the crunchier the texture! Add the nuts to the mixing bowl.

Blend the dates in the food processor until they make a paste – add to the mixing bowl.

Time to get messy! Knead the mixture together by hand. Once combined nicely, shape into 12 balls and roll in cacao powder.

Store in an airtight container for 1 week.

Substitutes

This really is a forgiving, versatile recipe – use what you have in the cupboard.

Nut allergy? Swap out the nuts for seeds, e.g. pumpkin, sunflower, and the peanut butter for tahini, or seed butter.

Not a fan of dates? Use raisins, dried cranberries, dried figs or apricots! If they’re on the dry side, soak them for 10 minutes in boiling water before blending to soften.

Don’t have flaxseed oil? Coconut or olive oil will work fine!
