Date & fig prebiotic energy balls

These delicious bite-sized energy balls are packed with flavour not to mention nutrients, making them the perfect on-the-go snack or pre/post-workout fuel!

Ingredients (makes 6-12)

120g figs (dried, or approximately 3 fresh figs)

50g dates

120g walnuts & almonds (or nuts/seeds of your choice)

1 TBSP Complete Prebiotic

Method

  1. Add the nuts and Complete Prebiotic powder to a blender and blitz lightly, leaving some chunks for texture.
  2. If the dates are on the dry side, soak them in hot water for 10 minutes first to soften (drain the water before using).
  3. Add the figs and dates to the nuts in the blender and blitz until the ingredients start coming together.
  4. If needed, add 1-2 TBSPs of cold water to help the mixture come together.
  5. Transfer the mixture to a large mixing bowl or clear surface and knead lightly together to finish combining.  Roll into 6 large or 12 small balls and enjoy!
