Prebiotic Pancakes

These delicious pancakes are gluten-free, contain healthy fats and a good dose of protein, plus plenty of prebiotic fibre to feed all your friendly gut bacteria!

Ingredients: (makes between 6-8 pancakes)

  • 2 large bananas – not ripe*
  • 3 large free-range eggs
  • 2 TBSP ground flaxseeds
  • 1 TBSP Complete Prebiotic powder**
  • Coconut oil for cooking

Topping ideas:

  • Fresh lemon juice and a drizzle of yacon syrup
  • A spoonful of live yoghurt and a handful of berries
  • Drizzle over some melted 70% dark chocolate for a delicious dessert!

Bananas are sources of inulin and resistant starch.

Inulin feeds the beneficial bacteria which in turn produce short-chain fatty acids (SCfAs) that help regulate hormones involved in appetite control.1https://pubmed.ncbi.nlm.nih.gov/26500686/

Resistant starch, while being resistant to our own digestive enzymes, is fermented by our gut bacteria which then produce SCFAs such as butyrate which has many health benefits including reducing inflammation and supporting a healthy metabolism.2https://www.ncbi.nlm.nih.gov/pubmed/16633129

Eggs provide an excellent source of protein and healthy fats.

Flaxseeds are a source of omega-3 fatty acids3https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4375225/ and are amazing for overall gut health. Flaxseeds support regular bowel movements, reduce constipation4https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5944250/ and provide fuel for gut bacteria.

The Chuckling Goat Complete Prebiotic is a combination of 18 different types of naturally occurring fibre and can account for 10 g out of your recommended 30 g daily intake.

Method:

Whizz up all the ingredients in a blender. Coat a non-stick saucepan lightly with coconut oil. Pour in enough mixture to create an ‘American-style’ pancake, the size of a saucer. You may be able to do a couple at a time depending on the size of your saucepan. Allow them to cook enough on the under-side (a few minutes) so that you can flip them over and cook the other side. Enjoy!

*Make sure the bananas are not ripe and still quite firm (otherwise the mixture becomes too runny and the pancakes tend to burn due to the higher sugar content)

**The addition of the Complete Prebiotic powder will turn the mixture a slightly green-brown colour which is absolutely fine (just may not win any awards for presentation!)
