Valentine’s breakfast: red velvet overnight oats

Get ready for Valentine’s morning and treat yourself (and your gut bugs!) to this decadent red velvet overnight oat dish 💓

Ingredients

Serves 1

  • 1/2 very ripe banana
  • 1 TBSP finely grated fresh beetroot
  • 1 TSP cacao powder
  • 50g rolled oats
  • 1 TSP vanilla extract
  • 150ml milk of choice (goat, oat or almond milk work best!)
  • Fresh strawberries and dark chocolate to serve (optional)

Method

  1. Mash the ripe banana until smooth then add the fresh beetroot, cacao powder, oats, vanilla extract and milk to the bowl and combine.
  2. Pour this mixture into a sealed/covered container and leave to chill overnight, in the fridge.
  3. In the morning, stir your oats, and top with strawberries and dark chocolate for extra yumminess!
