Hot Honey Halloumi & Peach Flatbreads (ready in 20 minutes!)

As the weather warms up, the last thing you want is to spend an hour over a stove in the kitchen. These Hot Honey Halloumi & Peach Flatbreads are fresh, full of flavour, and easy to whip up, making them the perfect quick summer dinner for busy families.

Sweet peaches, salty halloumi, and creamy whipped feta come together with a drizzle of hot honey for that perfect sweet-and-spicy combo that’s everywhere this summer. Best of all? They’re on the table in just 20 minutes! Bon appétit!

Ingredients (Serves 4)

  • 4 flatbreads
  • 225g halloumi, sliced
  • 2 ripe peaches, sliced
  • 150g whipped feta (or blend feta with Greek yoghurt)
  • 2 handfuls of rocket
  • 1 avocado, sliced
  • 2 TBSP hot honey
  • Juice of half a lemon
  • Fresh basil leaves
  • Black pepper

Method

  1. Dry fry the halloumi for 2–3 minutes on each side until golden.
  2. Warm the flatbreads for 1 minute.
  3. Spread each flatbread with whipped feta.
  4. Layer over the rocket, avocado, peaches and halloumi.
  5. Drizzle generously with hot honey.
  6. Finish with basil, lemon juice and plenty of black pepper. Yum!

Easy swaps

Switch it up and use nectarines instead of peaches, cottage cheese instead of whipped feta, and/or chicken instead of halloumi.
