Did someone say National Dark Chocolate Day? Sounds like another healthy pancake opportunity!
These easy pancakes are so tasty you won’t believe they’re good for you 😉 Dark chocolate chips bring not only a delicious flavour but also a bunch of proven health benefits. Dark chocolate is a rich source of antioxidants and polyphenols, provides many nutrients including magnesium and iron, may improve blood pressure and heart disease risk, and could even improve brain function!1https://www.healthline.com/nutrition/7-health-benefits-dark-chocolate

- 1/2 banana
- 30g oats
- 10g millet
- 1/2 tsp baking powder
- 1 egg
- 60ml milk of choice
- 40g Greek yoghurt
- 15g dark chocolate chips
- Coconut or olive oil
- To serve:
- 100g probiotic or Greek yoghurt
- nuts and seeds of choice
- In a NutriBullet or blender combine the banana, oats, millet, baking powder, egg, yoghurt, and milk. Add the dark chocolate chips to the combined mixture.
- Heat a little oil in a pan (smaller the pan the better). Add 1/4 of the pancake mixture to the pan. Cook until golden/brown. Flip and cook the other side. Repeat this until all mixture is cooked (makes 4).
- Stack the pancakes. Add yoghurt on top. Sprinkle with seeds and crushed nuts. Enjoy!
