Fibre-rich lentil soup

Ingredients

  • 200 g red lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 5 cloves garlic, minced
  • 400 g can chopped tomatoes
  • 1 L vegetable broth
  • 1 TSP cumin
  • 1 TSP turmeric
  • 1/2 TSP black pepper
  • 1/4 TSP cayenne pepper (optional)

Instructions:

  1. In a large pot, sautΓ© onion, carrots, celery, and garlic until softened.
  2. Add lentils, diced tomatoes, vegetable broth, and spices.
  3. Bring to a boil, then reduce heat and simmer for 30-40 minutes, until lentils are tender.
  4. Blend for a smoother texture or leave it unblended for a chunkier consistency.
  5. Serve hot with a side of buttered fibre-rich bread.
